My two eldest boys challenged me to start a cooking blog with simple recipes that we can cook together - and my youngest one has now joined in. I am hoping they pick up some cooking and photograph skills... or that at least they learn to design and run a blog.


RED CABBAGE

This has a sweet-ish taste, so it is a good way to get children to eat cabbage. It works very well with roast pork or beef.

You need:
- one red cabbage (cut it into thin slices)
-2 onions (chopped thinly)
- one apple (peeled and chopped)
- salt
-two tablespoons of balsamic vinegar
- Olive oil (three tablespoons)
-half a glass of water

Heat the oil in a pan (medium heat). Add the onion and fry it until it becomes golden (light) - this will take 5-6 minutes. Add the red cabbage and the apple and let it fry for 5 minutes. Then add the salt, balsamic vinegar and water. After 4-5 minutes reduce the heat and let it all simmer for 50 minutes until the cabbage is soft.
