My two eldest boys challenged me to start a cooking blog with simple recipes that we can cook together - and my youngest one has now joined in. I am hoping they pick up some cooking and photograph skills... or that at least they learn to design and run a blog.


MADELEINES

We are having a bit of a French theme for a couple of weeks. These madeleines are very lemony and truly moreish. You need a madeleines' tray  - we have a silicon one that we bought some time ago and had never used until now.

You need:
- 2 eggs
- 120 g butter
- 100 g sugar
- 100 g plain flour
- one teaspoon of baking powder
- zest and lemon juice of one lemon

Preheat the oven at 240 degrees.

Mix the sugar and eggs. Then mix the flour with the baking powder and fold it into the eggs and sugar mixture. Melt 100 g of butter and add it to the mixture. Then add the zest of the lemon and the lemon juice.

Melt the remaining butter and brush it the madeleines tray with it. Put the mixture into the madeleines tray (one table spoon for each madeleine). Put it into the oven and turn the oven down to 200 degrees as soon as you put the tray in. Bake for 10 minutes. This mixture should be enough for 22-24 madeleines.
