My two eldest boys challenged me to start a cooking blog with simple recipes that we can cook together - and my youngest one has now joined in. I am hoping they pick up some cooking and photograph skills... or that at least they learn to design and run a blog.


COURGETTE FRITTERS

You can do this with courgettes, carrots, potatoes or any combination of the three.

You need:

-three courgettes (grated)
- one potato (also grated)
- 2 eggs
- half a clove of garlic (grated)
-50 gr of self raising flour
- a handful of parsley
- a pinch of grated nutmeg
- salt
- olive oil to fry.

Mix all the ingredients. Heat the olive oil in a frying pan. Drop spoonfuls of the mixture into the oil. Wait for 2 or 3 minutes until the fritters get a golden colour, turn them around, fry them on the other side and take them out. It is best to put them on a plate lined with kitchen paper to get rid of the excess oil.

You can eat this on it own, with pesto, hummus, yogurt sauce (yogurt, salt, lemon and mint)...

As always be careful with the grater as children forget that a grater is similar to a knife.
